Today I wanted to share a recipe of one of my favorite breakfast meals with you. It is Avocado, Fried Beans & Egg Over Toast. And not only is it delicious and healthy but it is so easy to make.
One of the things that make this recipe so simple, is the fact that I always utilize the extra refried beans I have on hand from dinner the night before. If you don’t have any leftover beans to include in this meal, you can always use a can of refried beans from your local grocery store. Which is just as easy. I prefer to use my own refried beans when ever possible because I use olive oil to refry my beans and because I get to control the amount of salt added to them. Also I used pinto beans in the recipe below, but you can use black beans because of the added health benefits, which is what I love to do.
I stumbled across this recipe from my love of eating Refried Beans and Turnover Eggs w/Tortillas, for breakfast. I was looking for a healthy substitute for the 2 corn tortillas I had per serving. As I was scanning my kitchen, the whole wheat bread caught my eye, which sat in a basket directly below my avocadoes. And so this baby was born!
This is a healthy delicious alternative to refried beans, eggs and tortillas. Not only does it have the great flavor combination of turnover eggs mixed with refried beans, but the creaminess from the avocado and a crunch from the toast, add wonderful texture. If you love your refried beans and eggs with tortillas you will definitely love this recipe!
Avocado, Fried Beans & Egg Over Toast
Ingredients:
- 1 tablespoon Extra Virgin Olive Oil
- 1 egg
- 1 pc 100% Whole Wheat Toast
- 2 heaping tablespoons of mashed beans
- 1/4 Avocado – Sliced
- Salt & Pepper
Directions:
- 1. Drizzle evoo into medium skillet and turn burner on medium-high heat. Once oil is hot enough (should be shimmering) crack egg and place in pan to fry. Reduce the heat to medium and sprinkle with salt and pepper to your taste. Allow to cook about 2-3 minutes.
- 2. Meanwhile place slice of whole wheat bread in to toaster to toast.
- 3. Back to the egg. Once the white on the bottom of the egg has cooked through, carefully flip over egg, making sure not to break the yolk and to keep it to one side of the pan. Then add the beans to the other side of the pan to warm up. Allow egg to cook thoroughly and beans to heat up throughout. This should take about 2min. Be sure to stir the beans about half way through cooking. Turn off heat from stove.
- 4. Remove toast from toaster and spread warmed beans over one side of the piece of toast.
- 5. Then gently remove fried egg and place over the beans.
- 6. Next top egg with avocado slices.
- 7. Now Eat and Enjoy!
